TROYES, ancient capital of Champagne and the main town in the southern part of the province, is a gem. Its high, narrow streets of restored, half-timbered houses look like a film set for a Tudor period drama. Throw in an elegant Gothic cathedral, some superb lesser churches, a fistful of Renaissance mansions and a couple of exceptional museums and you have a delightful place to spend a couple of days.
